Whole30 Day 12 (Saturday, August 25)

Breakfast (pictured): Shredded carrots, julianned zucchini, half a sweet potato, one full egg + 2 whites sautéed in coconut oil. Nutmeg, cinnamon, and curry. Cup of black coffee. This is my favorite! 

Lunch (pictured): Chunks of organic beef sautéed in coconut oil with red onion, carrots, yellow squash, all thrown over a salad with pepper and cucumbers, and avocado, of course. An apple, too!

Dinner (pictured): Did you ever make a meal that you thought was going to be good and it wasn’t? Take for example, my dinner tonight. Frozen spinach, red onion, carrots, sautéed in EVOO—with lots of oregano, parsley, paprika, salt, pepper, nutmeg…I was trying to recreate a Greek food flavor, and…it just wasn’t good. Ha. I didn’t even eat half of it! The chicken was good though! I had two small chicken cutlets, grilled in EVOO, with similar spices, and avocado on top. 

Dessert: Peach

Overall: Made it through another Saturday without over eating! I’m feeling like my energy is coming back, especially mentally—my mind is racing with fun, creative, and organizational things I need/want to do. Still haven’t worked out, but I’ll get there. Ha. My skin is making slow progress, which is probably due to the medication, but I can’t help but believe my food is also making a difference.
