Inspired by Olivia, I am going to start blogging my daily gluten free habits. I have lost 4 pounds since I started eating about 90% gluten-free on August 7 and I feel fantastic. 

So here’s my recap of today!

Breakfast (163 calories)

  • 1 1/4 cup Silk Very Vanilla
  • 2 shots of espresso 

Lunch (347 calories)

  • 1 serving quinoa
  • 1 1/2 Roma tomatoes
  • 1 eggplant, roasted
  • olive oil

Snack (about 100 calories)…not pictured

Dinner (about 430 calories)

  • homemade pea and mushroom risotto 
  • 1.5 large scallops

Dessert

  • A few spoonfuls of Talenti Sea Salt Caramel gelato…was so happy to learn that this is gluten free! 

Laura, I’m so proud of you :) You’re doing great and I LOVE seeing what you’re eating! The scallops look amazing…mmm…

PS. Is that the new kitchen in the background? Gorgeous!
