Inspired by Olivia, I am going to start blogging my daily gluten free habits. I have lost 4 pounds since I started eating about 90% gluten-free on August 7 and I feel fantastic.
So here’s my recap of today!
Breakfast (163 calories)
- 1 1/4 cup Silk Very Vanilla
- 2 shots of espresso
Lunch (347 calories)
- 1 serving quinoa
- 1 1/2 Roma tomatoes
- 1 eggplant, roasted
- olive oil
Snack (about 100 calories)…not pictured
- a few of my new favorite crackers: Sea Salt Lentil Crackers
- Cypress Grove Chevre
Dinner (about 430 calories)
- homemade pea and mushroom risotto
- 1.5 large scallops
- A few spoonfuls of Talenti Sea Salt Caramel gelato…was so happy to learn that this is gluten free!
Laura, I’m so proud of you :) You’re doing great and I LOVE seeing what you’re eating! The scallops look amazing…mmm…
