Day 3 of Whole30:
Breakfast (pictured): I had this ingenious idea while working out (finally) this morning. I had that roasted cabbage from yesterday, what if I baked it with egg whites all dripped into it’s creases? So, I tried it. I put two slices of the roasted cabbage in a small pan, put the oven on to 350, and whisked up two egg whites. I sort of slowly poured the egg whites into all the nooks and crannies of the cabbage and then let it cook for like 1/2 hour. It got all crispy brown on top, and I added a slice of avocado to each piece! It’s really delicious.
Lunch: Giant salad with red pepper, orange pepper, carrots, avocado, chicken breast, red onion; tossed with olive oil, black pepper, lemon juice, garlic powder. I love giant salads! Had a few chunks of pineapple for something sweet.
Snack: Cantaloupe. Iced coffee from Starbucks, black.
Dinner (pictured): Spaghetti squash, zucchini (julianned), baby heirloom tomatoes, 1/2 an avocado, onion, tossed in coconut oil with basil, oregano, parsley, red pepper flakes.
Dessert: Organic Fuji Apple.
Overall: I’m still feeling good, I don’t feel “different” or anything like that, however. I feel full of energy, though I’m tired by 8:00PM. I think I need more sleep in general. I’m really loving all the fresh veggies and being creative with cooking; I’ll have to start to plan ahead for when school starts. The downside is I’ve been cooking non stop and keeping up with all the dishes is a pain. My workout today was tiresome, and I felt like my body hurt…I’m wondering if it’s adjusting or something. I’m not temped to eat sugar or gluten, which is good.
Today’s high point: I got my Foodie Pen Pal package, and it’s all things I can eat after the Whole30! (More on this later!)
Today’s low point: I’m tired today, and though I only did a mile this morning, I felt like my body was fighting me.
Song of the day: Head Over Feet by Alanis Morissette; I got Jagged Little Pill from the library, and it’s an awesome CD.
I’m heading to bed super early tonight. I think this is going to be good for me.
One last thing: literally everyone on the internet that I talk to/reads about this plan has been SO utterly kind and encouraging. It’s really uplifting.
Also: the librarian waved my $1.60 late fee; so I put some quarters into people’s meters. Pay it forward, friends!
Workout: 13 minutes on treadmill, ran a 12 minute mile.
