Day 2 of Whole30:
Breakfast (pictured): Red pepper, green pepper, 2 egg whites, avocado. Fried together with some coconut oil! Half a cup of black Starbucks coffee. Looks like Christmas in a bowl.
Lunch (pictured): Well, I had a head of cabbage that needed to be cooked, so I made two different meals with it. The lunch meal is a stir fry of cabbage, shredded carrots, a piece of my grandma’s grilled chicken (with EVOO), tons of garlic, and curry, nutmeg, and caraway seeds. I also roasted cabbage in the oven with tons of garlic, lemon juice, EVOO, and curry. That will last a while!
Snack: (I’m not actually a huge snack person, but I’m on these antibiotics for my skin and they make me incredibly nauseous if I don’t take them on a completely full stomach. It’s very annoying.) 8 small strawberries. Cup of earl gray tea with nothing in it.
Dinner: Spaghetti Squash (one of my all time favorite foods!) with mushrooms, onions, and carrots sautéed in coconut oil, chicken breast, with chunks of avocado on top. I threw in nutmeg, curry (been in love with curry all day!), and garlic. Delicious!
Dessert: A few blueberries and some cantaloupe.
Overall: I feel good! I actually didn’t even finish my lunch today…and I ate really slowly, which is really unusual for me. I’m not hungry at all, and I’m excited about cooking, which is good. Today happened to be almost a meditative day for me: music, art, and no talking. Literally. It was peaceful and helped restore some balance in my anxious body. I didn’t work out, but I worked out my mind (right?).
I have to admit: it’s really difficult for me to use oils and eat avocado without worrying about calories. But, I realized I don’t actually need thaaaat much oil to stir fry, and just a feeeeeeew pieces of avocado satisfy my hunger; all in moderation, right?
Today’s high point: Finding new music! I’m obsessed with Lucy Wainwright Roche, the singer-songwriter daughter of Suzzy Roche (of The Roches) and Louden Wainwright. She’s an awesome musician.
Today’s low point: I haven’t been getting enough sleep, for sure.
